I don’t know about you, but in our house eating a whole watermelon is always a race against the clock. While we love watermelon on a hot summer day, the two of us usually only manage to eat 3/4 of a large watermelon before we have to throw out the remaining 1/4 when it goes bad. That said, the following recipe has changed everything. We not only finish whole watermelons but we buy them more regularly.
We have started to cold press 1/3 to 1/2 of a watermelon and save the rest for eating. Furthermore, I think the recipe below is a perfect balance of fruit, heat and citrus, great for a hot day refresh. Not only is it delicious, but watermelon is a great source of vitamins A, B6, C, antioxidants and amino acids. Great for heart, bone and prostate health.
It’s simple… juice
1/3 – 1/2 watermelon
1 lime peeled
1 jalapeno seeded
Option to add vodka or tequila for a boozy kick
